Kaiseki cuisine started about 500 years ago and was called a warm stone, because It surpassed coldness and hunger, putting the stone warmed by the monk during that time into the bosom. Originally Sen Rikyu named kaiseki, a light meal ate before drinking tea at the tea ceremony.
